Each year, we begin in February, sowing heirloom seeds in our greenhouse — precious, time-tested varieties that carry deep flavor and resilience. In April, we carefully transplant the seedlings into our open-air garden, where they grow alongside companion plants that support soil health, deter pests naturally, and create a balanced ecosystem.
We follow the principles of permaculture and regenerative agriculture, which means:
